When Drew and I went to Nashville last weekend, we went to this cute little fancy place that Mikki and her husband took us to and mikki ordered Hummus for an appetizer.
*For the record I have NEVER had hummus before, or even liked the idea of hummus
Mikki ordered it and offered it to the table so I tried it...Holy Cow-I LOVED it! Drew did not, but I loved it!
I told my mom that I like it and that I wanted to make some so when Drew and I went out today we picked up stuff for it and made it-Mom couldn't believe that I like it or that I made it fresh----MMMMMM so good!
Here is the recipe that I got online and followed--pretty good!

Lemon Garlic Hummus

Ingredients

  • 3/4 cup vegetable oil
  • 3 tablespoons lemon juice
  • 2 cups garbanzo beans (chickpeas), rinsed and drained
  • 2 teaspoons minced garlic
  • 1/2 teaspoon salt
  • Pita bread, cut into wedges

Directions

  1. In a food processor, combine the oil, lemon juice, beans, garlic and salt; cover and process until smooth. Transfer to a small bowl. Serve with pita wedges.

Darla Goldsby
*8 week old lab mix puppy
*very ADHD
*has done VERY well (knocking on wood) at house training-only 2 pee and 1 poo accident in the house!
*will fall asleep within 2 min in the car (just like me!)
*has done very well at sleeping in her crate (well, as long as Drew and I are in bed and the lights are out-she didn't like that I was in the shower last night and she was in her crate...)
*starting to know/respond to her name
*LOVES her monkey-the thing in the picture at the top

Drew and I are debating on boarding her for Christmas or not...we have reservations for her to stay at her new vets office for when we go to Memphis and then Dyersburg...the thing is, if we take her with us she would have to stay in her crate at Ginger's house by herself for a while during the day...no fun for anyone, but if we board her, we drop her off today and then we can't pick her up until Monday--no fun for me...

new best friend

Came home with an awful headache-on the verge of a migraine...spent the last 2 hours of school fighting the headache, thought it was from lack of caffeine, hurt to bad to stop by sonic to see if that was the cause, so just came home-crawled straight into bed and slept for 4 hours...
Thank you Excedrin, you are my new best friend!

the week in review

*took hank back home to his foster parents...sad day for me, I had fallen in love with him, but the aggression and pulling was just too much for me.
*put a deposit down on a new puppy-who is actually a puppy, just getting weaned off mom...rescue dog from covington, her name is Darling (we're going to call her Darla...even if Drew doesn't like it;) )
*went to memphis, visit with my family
*now, drew and i are spending the day cleaning and organizing and throwing away stuff we don't use/need, we have to get this apartment PUPPY proof we are picking up Darla next Monday
*only 5 days of school left before Christmas break-where in the world has the school year gone??

that's just about it, atleast for the big stuff...I need to go back to folding and putting away laundry...


Oh, and it's SNOWING!!!!!!!!!!!!!
The temps are supposed to be in the teens tonight and tomorrow, with a windchill at or below freezing...I am so hoping to have a day off tomorrow, last year they canceled school because of the cold temps and kids waiting for the buses, so lets HOPE that she cancels school again, I could so go for a day off to continue working in this apartment...maybe even organize the front bedroom...

I regret to inform you...

So after my last post Drew and I went to Memphis and met Hank. He is a SWEET boy, but...I don't think we are going to be able to keep him. After we got him we went to PetSmart to get a harness for him (because he pulls...) and he growled and snapped at another dog...not good. We went to Hollywood Feed later on to get a brush for him...and he gritted his teeth and snapped at another dog-both unprovoked situations. Then when we were getting ready to get out of the car at the apartment, he growled at one of the little girls that lives downstairs...NOT GOOD AT ALL...so Drew is going to call the foster mom back today and talk to her, but I don't think it's going to work out with Hank. It's so weird because he is GREAT at home, very gentle and quiet, but anytime he is out in public and around other dogs he is like a different dog. Also, he pulls on the leash...last night he literally pulled me around the corner when I took him for a walk-I am not some tiny little weak thing and I couldn't hold him...I would not feel comfortable walking him at North Park--which is my goal...so I just don't think is the right dog for Drew and I...he is the right dog for SOMEONE, just not for us...

Made me so sad to admit it, but it scared Drew and I when he growled and snapped at those dogs and then sealed the deal when he growled at the little girl...

Meet Hank.
Hank is a year old rescue dog that will most likely be leaving his foster home in Cordova to come live with Drew and I on Friday...Hank is an adorable besinji/border collie mix that was rescued.
Drew talked with his foster mom Josie today and she said he is a great dog...he's already house trained AND crate trained, heck yeah!
We are going to go meet him on Friday and as long as things go well we will bring him home with us! Can't wait!

a day late and a dollar short

So Thanksgiving was on Thursday and I am WAYYYYY behind on this post, but I have been sick over the weekend and trying to "fix" my blog...
The tree is part of a writing project we did in class the week before break. We talked about what we are thankful for and each of the 1st graders wrote what they were thankful for on the leaves. It was an awesome thing to see the WIDE range of what these little 6 and 7 year olds were thankful for...one of my boys said he was thankful for doritios...oh the innocence!
There are so many things that I am thankful for in my life...really too many to name on here without writing a book. I really just want to remind myself (and the 1 1/2 people that might actually still read this) that it's not always what you have but how appreciative you are of what you are blessed with.

I am blessed beyond measure, even when I feel like I am at the bottom of the pile, I just have to remember that I am a Child of God and He loves me know matter what!

"Mother-in-law" wing make over

Drew and I are in the middle (literally) of "re-doing" the front bedroom of our apartment. Some new news came about on Friday and it sounds like we will be in our apartment for a while longer so Drew and I have decided to do a little decorating work. Drew is also hoping to start a new program in january for nursing so he needs a good place to study and I would like a nice place to do my work/ scrapbooking so today I worked on moving around things in our front bedroom so that we have room for 2 "working" desks and the bed in that room...hopefully with the moving around of some stuff I can open that area up and organize my scrapbooking stuff so that I can actually get some done...hopefully i will post some pictures after the fact...but you know how that goes.

So I have seen people with blogs and posts about the date today...did i miss something? I guess it's just another one of those 8-8-08 things...no big deal here in the Goldsby household...it was just a great lazy, productive Sunday. We went to the 8:30 service at Northside and it was great...Then Drew helped me get some work done for school, brunch at Old Country Store and then back to the apartment and took a wonderful Sunday afternoon nap and worked off and on on school stuff all evening...watched the Amazing Race and now I am getting ready to head to bed and read for a little while...

Product Review


The NookDrew and I have been looking at the Barnes and Noble bookstore every time we go to Memphis. We go to look at this ebook reader...the B & N version of the Kindle...we have compared and researched for weeks and finally decided to get one for each other for our 1 year wedding anniversary...

Well, while on Fall break in Knoxville I decided to take mom to B & N to LOOK at the nook, we have talked to her about them and she talked about possibly getting one, but she hasn't even held one, so I thought, Ill go show mom...we we walked out of that store with 2 nooks, 2 cases, 2 book lights, 2 extended protection plans, a case for drews (when he gets his), and a pack of screen protectors...I tried to talk mom out of buying one for me, but she bought me one anyways (THANKS MOM!!!)

I have spent the last few days reading City of Ember...it's WONDERFUL!!! The nook is VERY easy to use and easy to read.

My only complaints:
*Battery life-I am thinking it's because it was new and didn't have a 100% charge, and we had the wifi on (becuase it took us a while to figure out how to turn it off...) but hopefully after charing it fully and having the "airplane mode on" the battery life will last MUCH longer!
*free ebooks section on B & N online section sucks...well it sucks for me, I don't like the "trashy" romance novels...

All in all, I can't wait to get Drew's for him for our anniversary... I LOVE IT!!!

Fall Break

It's so hard to believe that it's already time for Fall Break...and the fact that Fall Break is already 1/2 over with...This school year is going by sooo fast it's very difficult for me to stop and think, my time with my first set of 1st graders is 1/4 over with!!
*Drewby and I left right after school-well about 30 minutes after I left school...we drove pretty much straight through, made it through Nashville-at 5:00-in about 25 minutes-I was amazed! We ended up hitting traffic after Nashville, near Lebonnon...*we made it to Crossville after the rents headed back to Mama J.O.'s so we missed the 1st night of the reunion but it was nice to get there and just hang out at the house.
*Saturday was the reunion-oh boy, that was fun. It was pirate themed this year and that was entertaining. they had lots of games and some very very good bbq for lunch!
*we headed out to the "deer camp" after that and walked through the camp and mom and I had some WONDERFUL times remembering our times in there with Papa...oh boy, how I miss him. We picked up some things to remind us of that place, not that we would ever forget...


*Drewby and Dad left Sunday morning and mama j.o., mom, and i headed out for an adventure...we headed towards knoxville via highway 70...drew and i did this drive back in the summer when we went on our camping trip and it was beautiful and fun...turns out mama j.o. used to "hang out" at several of the places that drew and i loved so much...
*the pictures above are at Ozone Falls...drew and i found this and it turns out that mama j.o. used to walk here from crab orchard and play down at the bottom of the falls...so cool!*My fall break has been one of the best...spent some great time with my mom, made some great memories with these 2 women in the picture with me...I am beyond blessed and could not be more greatful as we get closer to thanksgiving!

My favorite time of year has officially begun! Fall started just a few short days ago and the temperature has finally decided to cooperate. Drew and I have slept with the window open for a few nights now and it's AMAZING!!

I have a few things on my plate for the next few days, but they all end with the start of FALL BREAK!!! We are doing something we used to do ALL the time when I was little-goto Crossville for Fall Break! Only this time, Drew and my mom and dad will be heading up to the Rose Family Reunion-which I am excited about, but also nervous about...I don't think I have been to a reunion since Papa died...maybe once like the next year or so, but not since then...

Dani is doing o.k. I think she is in quite a bit of pain, but I guess that's to be expected when you think about what her body has been through in the last few days!

off to bed with the husband...of almost a year already!!!!

GOD IS GOOD!

Danielle's surgery could not have gone better! The surgery was just around 4 hours or so and she was in a room less than 24 hrs post op. Prayers have been answered and more are requested for recovery...she is a fighter and will do more amazing things!

school update...
i now have 21 angels ;) and for a little while on tuesdays and thursdays i have 24 students with 3 of them being students with special needs-in addition to my 3 with special needs. It's been stressful and busy, but it's such a different kind of stress from last year...i have a bunch of work that i will have to do this weekend, mainly because i haven't done much of all this week!

I would like to introduce you to one of my best friends...she is also one of my husband's best friends...her name is danielle, although i usually call her dani.
she is an AMAZING friend and person, she went to lambuth with me, and worked at lakeshore with me, now she is finishing up school at mtsu and she works with a youth group in the boro.
she has 2 wonderful dogs and i just love her dearly.
just over a year ago dani found out she had heart problems...i went with her to one of her cardiologist appointments...we talked, we cried, we have laughed and so much more...
well on friday morning she is having her first surgery to fix her heart problem.
her cardiologist and surgeon are amazingly talented and she has a thermal blanket of prayers being sent up on her behalf but i ask you for more prayers, add to the thermal blanket of prayers so that she can feel the community that is praying for her and the entire medical staff!
i pray for a smooth and productive surgery with no complications and an even smoother recovery.

dani-if by chance you read this...i hope you know how much you mean to drew and i and i have gotten all my work done for friday and then next week so we will be leaving jackson as soon as i can walk out of my classroom tomorrow afternoon! I LOVE YOU SOOOO MUCH and you have an ARMY OF PRAYER WARRIORS praying for you!

Hump Day!

I have made it over hump day, and it's a long weekend coming up...

I have so many different feelings right now than I did this time last year. Last year doesn't even begin to compare-from the very stressful job, to the getting the swine flu, to the planning a wedding, to the side effects from the swine flu and trying to go back to work to early, to the newly married life, to so many different things...I just cannot express how blessed and lucky I am to have done so much over the past year.

We have been in school for 23 days today...we count every day! It's hard to believe that I have already torn the 1st month off my teacher calendar off my desk...it's hard to believe that progress reports go home on friday...it's just hard to believe!

Dive into 1st Grade!

So I know that I didn't keep my last promise about keeping the blog updated but so far this year is SOOO much smoother than last year. So my goal is to keep this updated, and update at least once a day! I will begin with just some pictures from my classroom.
These were taken right before school started and now I have a different seating arrangement, more students, and words on the word wall...and we're working on our 5th week of school while some schools are just starting...

it's been too long...

...it really has been way to long since my last post and really since a consistent sting of posts, not that anyone really reads this, but for me at least, it's been WAY TOO LONG!!

So much has gone on since I last posted...I have gotten my classroom ready for 1st graders, Drew and I went on a road trip, I got my hair chopped off, and so many other little things that have made this month so interesting...

Yet again, my goal is to write or post something each day and hopefully with my routine I will actually complete that task...

it's been wayyyyy too long...but i just can't seem to get back into the groove of posting.


school starts back soon-we can get into the building on the 15th to work, i plan on spending the 15th and 16th up there working and then no more until i have to be up there for inservice, we'll see how well that plan goes!!


wishing that i could get into East to work on my room and get all of my school stuff out of my living room and garage


drewby and i are taking care of my uncle's house while he is in new jersey working he has 2 dogs and 3 cats and it's been so much fun, another fun note-marv has offered us his house-to rent it for the same amount as our apartment but we would get another bedroom as well as a backyard and a garage...there's some work to be done and it would be a little while before we would move in but it's a promising thought
